How do you properly store black truffles?

Storing fresh truffles is an art, and the right technique is key to preserving their flavor and aroma! Which method you choose depends on the type of truffle and how long it is being stored.

How to store black truffles?

You should know that moisture caused by condensation is harmful to black truffles.

If you are considering using fresh black truffles within a few days, from 5 to 10 days, we at Terra Ross recommend:

1. Do not hesitate to get them! Truffles should be stored in the refrigerator; Do not waste time and get your truffle by courier as soon as possible! Any delay reduces their aroma and freshness.

2. Without wasting time Refrigerate in an open container at +1 to 4°C for 1 hour to cool and prevent condensation.

3. Wrap each truffle in a white, colorless paper towel. And store them uncovered in the refrigerator at a temperature of +1 to 4°C. If their aroma is too strong, you can close them in a jar or a tightly closed bag with paper towels.

Daily maintenance: Change the paper towel every day to avoid moisture.

Consume quickly: They only last a few days if stored optimally - Shelf life: 5-10 days

White mold on truffles? No need to panic! This harmless mold can be easily washed off with running water and a gentle brush. Just make sure the truffles are firm. If they are soft like a tangerine, for example, it is time to say goodbye to them - they have spoiled. Enjoy your truffle journey!

Store black truffles longer

Freezing: First wash the black truffles thoroughly and then dry them to remove any moisture. The best way is to slice or grate them and then place them in an open container in the freezer at -18°C. Once they are completely frozen, place them in a tightly sealed bag.

This method makes the truffles great, but unfortunately their aroma dulls and their taste changes. If you use frozen truffles in cooking, be sure to enhance their taste by pouring them with truffle-flavored olive oil!

Preserving black truffles by drying: You can also dry black truffles after drying them. This can be done in a home fruit and vegetable dehydrator. Black truffles are washed well, finely chopped or grated and then carefully arranged in the trays of the dehydrator. Place them in an airtight bag or jar for a few hours after drying. It is best to store dried truffles in a freezer at -18 °C.

If you are using dried truffles for cooking, add them to the warm dish and enhance their flavor by mixing them with white truffle-flavored olive oil!
